OK, let’s be honest here.. everything tastes better with butter and this is merely an idea with some cheffy techniques added to help you prepare perfect buttered asparagus (and macros calculated to help you along). If you are okay with your urine smelling funky for a day, try this super-simple recipe. And if you don’t suffer from bizarre-smelling urine after eating asparagus, consider yourself a very small percentage of the population. (I will leave you to Google what I am on about, if you don’t already know.)   • 250 g large asparagus (weight prior to trimming)
  • salt
  • 20 g unsalted grass-fed butter
  • 1 TB Parmesan cheese finely grated

Instructions
  1. Snap off the hard, woody ends of each asparagus.

  2. Use a vegetable peeler to shave off and discard the bottom half of the asparagus peel.

  3. Your trimmed weight of the asparagus will be approximately 160g /5.8oz (and this is the weight the macros were calculated.)
  4. Bring a wide-bottomed pan of salted water to the boil. Add the asparagus and boil for approximately 4-6 minutes. This will depend on the thickness of the asparagus you purchased, but a good test is to lift one with tongs: it should bend slightly.

  5. Carefully remove the asparagus from the water using tongs and place on a plate lined with kitchen paper to drain. Season them with salt.

  6. Pour out the water from the pan and wipe the pan dry with kitchen paper.
  7. Add the butter to the pan and place back on the heat to melt. Return the asparagus to the pan and gently coat the asparagus in the melted butter.

  8. Serve immediately scattered with Parmesan, finely grated with a microplane.
