Ok I admit, I am jumping on the Veganuary band-wagon here BUT only for a day (because….. well, bacon…?!)Here is a delicious ‘cheese’ sauce which is so versatile. I call it a ‘cheese’ sauce because the Nutritional Yeast Flakes in it add a deep umami ‘cheesy’ flavour which is absolutely delicious – especially when served over cooked Broccoli. I have created this for my dairy-free readers here on M&L … Happy 2019!

Cashew Nut 'Cheese' Sauce (Vegan; Keto; Paleo)
A delicious, dairy-free cashew nut cheese sauce which you can use to drizzle over your veg. (The macros have been calculated on the sauce alone.)

Instructions
  1. Preheat the oven to 180°C / 355°F.
  2. Spread the cashew nuts out on a small roasting tray.

  3. Roast the nuts in the oven for 10-12 minutes until golden. (You may want to shake-and-rotate the tray halfway through.) Set aside to cool completely.

  4. Once the nuts have cooled, place them into a mini food processor, along with the nutritional yeast flakes and minced garlic.

  5. Add the water and blitz until as smooth as possible, scraping down the sides of the jug several times.

  6. Place the mixture into the fridge overnight. The next day, blitz again until smooth. Season the mixture with salt and white pepper.

  7. Heat the sauce up in a pan before serving. If it is too thick, let it down with a dash of water. Once hot, serve immediately.
  8. Delicious over cooked broccoli.
