Cajun Cauliflower Bake (Keto)

I never run out of ideas for making interesting side dishes to enjoy alongside meat or fish. I LOVE vegetables and believe its where you can get really creative. (It’s also where most of your daily allocated carbs should be coming from: high fibre, nutritious vegetables that are packed with goodness.) Here, I coated cauliflower florets in a spicy Cajun spice mix and roasted them until done. To add additional flavour and a creamy mouthfeel, I drizzled over a mix of double cream and sour cream before cooking for a few more minutes. This Cajun cauliflower side dish is so packed with flavour and spice, I advise it’s served alongside simple roasted chicken thighs or pork chops.

This is why I worked on a keto cauliflower cheese as a delicious side dish to your roast meat. The flavour is rich and satisfying and I love scattering over smoked sea salt flakes before serving for additional flavour and texture. The flavour of baked cream completely changes into a deep, rich full-flavoured smack of heaven! Here, I chose to do courgettes baked in cream and I was not disappointed. Be sure to finish the dish with plenty of seasoning (I love using smoked sea salt flakes).

This is my FABULOUS Keto Creamed Spinach recipe – perfect when served with a juicy ribeye nestled alongside it. It serves two people, so double up the ingredients to feed the family (although we all know that a mountain of fresh spinach will wilt down to nothing, but luckily it happens pretty quickly, so simply add the spinach to the pan in two or three batches at a time.) I gently caramelised shallots and garlic for added flavour beforehand and added the raw spinach to the pan – again, cooking slowly and over a low heat with no added moisture (please don’t boil your spinach!). This is a nifty way to mimic rice when you are serving a dish that needs all its lovely sauces mopped up. I cooked down onions and garlic to add more flavour before adding and cooking the blitzed cauliflower. It’s high in fibre and filling. You can play around and pimp it using different freshly chopped herbs or flavoured oils, but this recipe below is a good ‘base’, so go wild. I love the Coconut-roasted Broccoli that Funnyman whips up, but doing the same thing with cauliflower is incredible! At only two-ingredients, this will likely be a favourite in your home as much as it is in ours. Quick, uncomplicated … and simply heavenly. This recipe will serve 3 people as a side veg option on a keto diet, but Funnyman and I scoff the whole lot between the two of us alongside our Peppered Lamb Ribs quite often. Some may turn their nose up at mashing up cauliflower to mimic The Great Potato, but if you try it like this – you will be converted. I didn’t just stop at using a potato masher, I added full-fat cream cheese and then blitzed the mixture into a creamy, (dreamy) puree. All it needed was a little seasoning and it’s perfect as a side dish to mop up all those lovely flavours of your dish. You could also use it like I did to top my Low-carb Seafood Bake and Spicy Low-carb Cottage Pie.

Grilled Brie Mushrooms with Onion Chutney (Keto)

Keto Grilled Brie Mushrooms

This lovely small meal of grilled brie mushrooms can be served either as an appetiser for your next fancy dinner party, or enjoyed as a light meal along with some fresh salad leaves. The red onions are cooked down for a while on a very low heat, and their jammy sweetness balances the oozy Brie just perfectly. The general marrying of the two flavours are worth knowing, even for those that don’t like mushrooms. Some examples include Brie and onion jam keto sandwiches or toppings for grilled steak. And for those that LOVE the idea of a big, black mushroom – do this exact dish as it is written here and top your bun-less burger with it – you will never consider a bacon and Cheddar topping again!

I wasn’t always a fan of Brussels sprouts. I remember as a kid, I used to hide them under my napkin just so that I could be excused from the dinner table. What was I thinking? I LOVE them now! If you are not a fan of Brussels sprouts, you have probably been preparing them wrong. I sometimes finely slice them and fry them with grass-fed butter and bacon bits, or roast them until crispy (like I have done here) and serve covered with grated Parmesan.
