Chicken Mayo Seed Loaf

There is debate over whether its sarnies or sarmies. I don’t know about you, but I grew up in South Africa – and we called it sarmies-with-an-m. Any which way you say it, this is just a quick idea to showcase the M&L Keto Seed Loaf where I made mini chicken mayo sandwiches for a quick meal. I simply tossed cooked chicken pieces in my Homemade Mayonnaise and enjoyed it with deliciously sweet tomato slices and avocado. Clean eating all the way! (Top tip: if any seeds fall off the crust of the loaf, scatter them over your sandwich for extra crunch and texture.) The macros include the whole lot (two slices, as pictured): not too bad for a lovely lunch using all of your efforts.

Chicken mayo mini open sandwiches using Mud & Love's Keto Seed Loaf. A lovely, filling meal at only 6g carbs per serving (macros include the whole lot!)

  1. Assuming you have the cooked chicken pieces, Keto Mayonnaise (M&L recipe) and the two slices of Keto Seed Loaf (M&L recipe) prepared and ready, proceed with the steps below:
  2. Combine the cooked chicken pieces with the mayonnaise. Season with salt and freshly ground black pepper.
  3. Lay the sliced tomato onto the two slices of the Seed Bread. Lay over the avocado, then top with the chicken mayo mixture.
  4. Season with Pink Himalayan Salt and another generous crack of black pepper. As mentioned in the headnote, if any seeds fall off the crust of Seed Bread when you sliced it, simply scatter them over your open sandwiches. Enjoy your lunch!
