Follow the recipe below to yield 10 even-sized slices, because at only 2.4g carbs per serving (one serving = 2 large crackers), you can now do so completely guilt-free! Don’t omit the salt (as I did in my first trial) because its a necessary addition. Be sure to also cook both sides to achieve maximum crunch and colour. Super simple little creamy sweet keto fat pots (topped with tart raspberries to cut through the rich creaminess). The recipe makes 4 small pots and can be done in ramekins, but I used little plastic pots which I found on amazon. (Ignore the product description that says they are disposable – I wash and re-use them.) Simply wrap in clingfilm and take these babies to work with you! Just look at those macros – these are the ULTIMATE fat snacks! Macadamias are my favourite nut: they are high in fat and mind-blowingly rich in flavour when roasted. If you can spend 15 minutes once or twice a week to prepare a batch of these, you will have plenty of servings of these super-tasty, satisfying fat snacks. After roasting them, I scattered over a pinch of salt and Swerve® as soon as they came out of the oven, then allowed them to cool completely before storing in a sealed container. The macros are calculated on a portion size of 35g / 1.2oz roasted macadamia nuts – which is ample for a quick snack to get those fat macros higher, or satisfy your desire to crunch on something delicious between meals. They smell like popcorn and taste like heaven!

Just because you have given up flour doesn’t mean you can’t crumb-and-fry food anymore! I simply combined blitzed lean pork crackling with nutritional yeast flakes (<-my new favourite ingredient) and fried as normal. Absolutely incredible flavours and perfect to have on the side of your bunless burger. Leaner crackling is preferred for this recipe, so I used Mr Porky’s Crispy Pork Strips – which I have seen available at Tesco and Sainsbury’s here in the UK. I first tasted dark chocolate-and-macadamia nut cookies on honeymoon in Malaysia more than 10 years ago. This was LBK (life-before-keto) and Funnyman and I were literally eating our way through Kuala Lumpur and Penang (it’s a foodie heaven!) One afternoon, when strolling through one of the enormous department stores* in KL, we found a mainstream cookie kiosk called Famous Amos. Their dark chocolate and macadamia cookies were sublime – and here I am, still thinking of them 10 years later! My version of keto cookies are chewier than I remember theirs being, but just as fab.
I made a batch of these mini meringue bites to use in a blueberry mess I was playing around with one day. They are so delightful and they are a perfect sweet treat to pop into your mouth when you walk past them. (They lasted about half a day in my house with Funnyman’s sweet tooth!) It’s lovely when added to whipped cream and some blueberries or raspberries and you have yourself a tasty mess..
Nuts are an ideal keto snack as they are high in fat and fibre. However, the amount you snack on should be monitored. Peanuts are not permitted on keto, but there are plenty of other tasty options. These roasted nuts are moreish with a lovely hint of rosemary and heat from the cayenne pepper which you can adjust according to your preference. I scatter over a very small pinch of sweetener as soon as it comes out of the oven, but this is entirely optional. Since you are roasting and seasoning the nuts yourself, please purchase unroasted, unsalted whole nuts for this recipe.
Bribing Funnyman with my brownies is a nifty way to get him to do stuff around the house. I learnt this in wife-training school. He loves these keto brownies. They are the perfect size to hit the sweet spot and they make great fat bombs. I don’t have a sweet tooth at all, so making a batch of these along with other sweet treats for him is my way of showing him how much I appreciate him going on this Keto journey with me. The brownies store well in the fridge (although they would disappear in a day if I did that), so I freeze them individually after cooling and slicing. We always have double cream in the house, so Funnyman reheats them slightly and then pours a little cream over them. Happy Husband = Happy Wifey…
We just love our butcher here in Berkshire … He hooked me up with some pork skin, so I did the obvious thing … I made pork scratchings. Be sure to use a very sharp knife and work carefully when you slide away the fat.
The first time I had padrón peppers was in Barafina in Soho, London. Funnyman and I were drowning our sorrows, I cannot recall exactly but I suspect it was something financial. The irony was that we sat in this restaurant for about 4 hours and ordered three-quarters of the tapas menu items throughout the evening, washed down with plenty of wine (life before keto). Whatever was bothering us that night was soon forgotten (along with our financial common sense) – but the padrón peppers were memorable. Eaten whole, this is a risky little appetiser as some are hot and some are not. They are simply the perfect appetiser for someone who likes to live on the edge and I was delighted when I saw they are now readily available at the supermarket. I have made this several times and never encountered a spicy one, so perhaps not that risky after all..?
In case it hasn’t been clear (with all my talk of braaing!), I am living in the UK now, but I was born and raised in sunny South Africa. Those that know me will note that this post is way overdue – BILTONG: The way to my heart since I first chewed on it while teething as a baby (how teething is dealt with in South Africa) and my favourite keto snack ever! There are numerous stores around the UK that sell excellent biltong, but nothing beats the satisfaction of making your own homemade biltong.
You could probably fashion your own biltong maker (box, light, fan) but my trusty one has never let me down. It gets used a lot and has a permanent spot on my kitchen counter.
