Keto Cream-baked Eggs

If you are doing an egg-fast, or need some inspiration to jazz up eggs, may I remind you about the very simple, classic dish of cream-baked eggs, also known as oeufs en cocotte. My recipe below is uncomplicated and packed with flavour (it’s my current addiction when I don’t feel like cooking or if Funnyman is travelling!) Ramekins are essential for this specific recipe, but if you choose to use a wider, shallower dish, you may need to shave some time off the cooking. Its 30 minutes in the oven for the whites to set and for the double cream to bake to a heavenly flavour, but it’s well worth waiting for. I seasoned the cream with smoked salt flakes and garnished the finished dish with some some chives (to make it cute).

Enjoy this with my (toasted) Quick Chia Keto Bread, or any other bread recipes that you love. Truth be told, I just dive in with a teaspoon.

Cream-baked Eggs (Keto)
These super-simple cream-baked eggs feature only four ingredients but deliver massive flavours for a slightly fancy breakfast or light meal. Ideal option on an "egg fast". All this at 0.5g carb per serving!

Instructions
  1. Preheat the oven to 180°C / 355°F.
  2. Have two greased ramekins ready. Pour one tablespoon of double cream into each one.
  3. Crack two eggs into each ramekin, then add another tablespoon of double cream into each one covering the eggs. Season with smoked sea salt flakes and a little white pepper. Very gently agitate the mixture to spread the seasoning.
  4. Carefully place the two ramekins onto a little baking tray (#SafetyFirst) and place into the preheated oven for 30 minutes.
  5. Carefully remove dive in with a teaspoon. (Remember the ramekins are very hot!)
  6. NOTE: The flavour that baked cream brings to the dish is incredible. No one will judge you if you scooped the whole lot out and enjoyed it over a slice or two of my Quick Keto Chia Bread. Feel free to add more cream, I have started adding between 3-4 TB to each ramekin as the flavour of baked cream is intoxicating!
