Creamy Baked Salmon with Spinach & Tomatoes (Keto)

Salmon Baked in Cream

Funnyman tasted this salmon with spinach bake and said “babes, you don’t get older – you just get better!” Ha! I am my own worst critic and often make and remake dishes plenty of times before I write up the recipe and post them. This lovely dish has such simple, readily-available ingredients. The salmon is quickly fried skin-side down, then baked in a warm cream containing spinach and cherry tomatoes. It would be lovely served over Cauliflower Rice, Cauliflower Mash or any konjac/shirataki noodles that take your fancy (my favourite one is Eat Water’s ‘fettuccine’). I kept the skin on the salmon (which helps hold the fish together) but it softens when baking and you will likely skip it when dishing up. The acidity of the lemon squeezed over at the end is essential, so don’t forget about it.

  • 500 g salmon side
  • salt
  • 40 g unsalted grass-fed butter
  • 2 cloves garlic peeled and finely chopped
  • 70 g baby spinach
  • 250 g double cream

Instructions
  1. Preheat the oven to 180°C / 355°F.
  2. Pat the salmon dry with kitchen paper and season with salt.
  3. Melt half the butter in a large non-stick pan (one that can be used on the stove-top and in the oven). Fry the salmon skin-side down until crispy, approximately 1 minute. Gently flip over and cook the underside for a few seconds. Carefully remove the salmon and set aside.

  4. Add the remaining butter but lower the heat of the pan else the garlic will burn. Add the chopped garlic and cook gently until softened. (If your garlic burns - bin it.. burnt garlic is bitter and will ruin your dish.)

  5. Add the baby spinach and cook, stirring continuously until wilted. Again (I can't stress this enough), do not allow the garlic to burn.
  6. Pour in the cream and gently warm through. Season with salt and white pepper.

  7. Return the salmon to the pan (skin-side down) and add the halved cherry tomatoes. Spoon the warmed cream over the salmon.
  8. Place the dish in the oven and bake for 12-15 minutes.
  9. To serve, squeeze over the juice of half a lemon (catch the pips!) and garnish with chopped parsley. Salmon with spinach has never tasted this good!
