Fun and fabulous little skewers to snack on at a BBQ to replace the crisps and carb-laden snacks. This recipe makes 20 mini skewers and the macros are calculated as 1 serving=2 skewers (coming in at 2.1g carbs per serving)

Ingredients
  • squeeze fresh lemon
  • 1 large avocado
  • 40 raw King prawns peeled
  • 10 rashers smoked bacon halved
  • 5 TB olive oil
  • 3 TB soy sauce
  • 2 cloves garlic peeled and crushed
  • 2 limes halved to serve
  • sea salt flakes

Instructions
  1. Squeeze a lemon over your chopped avocado, then wrap each avocado cube with a half rasher of bacon. Skewer a prawn onto a mini kebab stick, followed by the bacon-wrapped avocado, and then a second prawn.
  2. In a small bowl, whisk together the olive oil, soy sauce and crushed garlic. Brush the kebabs with the marinade and grill over the braai (BBQ) until the bacon has cooked sufficiently.
  3. Serve immediately with halved limes to generously squeeze over. Season with a little sea salt flakes.
Recipe Notes

You could do these on the stove top or in the oven. For those with soy allergies, use tamari instead.
