I love the Coconut-roasted Broccoli that Funnyman whips up, but doing the same thing with cauliflower is incredible! At only two-ingredients, this will likely be a favourite in your home as much as it is in ours. Quick, uncomplicated … and simply heavenly. This recipe will serve 3 people as a side veg option on a keto diet, but Funnyman and I scoff the whole lot between the two of us alongside our Peppered Lamb Ribs quite often. He has both dishes waxed, so these are the nights I put my feet up and do nothing but watch him cook for me for a change…

- 450 g cauliflower florets trimmed equal-size
- 45 g coconut oil
- Pink Himalayan Salt

- Preheat the oven to 180°C / 355°F.
- Place the cauliflower florets into a large bowl. Melt the coconut oil in a small bowl in the microwave for 30-40 seconds on medium heat. Pour the coconut oil over the cauliflower and mix well to evenly coat.
- Before the coconut oil solidifies, spread the cauliflower onto a large roasting tray and place in the oven for 30 minutes, rotating the tray halfway through to ensure even cooking.
- Serve immediately scattered with a little Pink Himalayan Salt.
