Ingredients
  • 2 large egg yolks
  • 1 tsp Chardonnay vinegar
  • 50 g unsalted grass-fed butter softened
  • salt

Ingredients
  • 2 large egg yolks
  • 1 tsp Chardonnay vinegar
  • 50 g unsalted grass-fed butter softened
  • salt

Instructions
  1. Whisk the egg yolks and vinegar together in a bowl. Bring a pan of water to the boil.
  2. Hold the bowl above the pan of simmering water and whisk continuously as you add small amounts of butter at a time.

  3. Continue to whisk over the pan of water until all the butter has been added and emulsified into the mixture. The sauce will thicken and become creamy. Set aside until ready to use (you will notice it thickens further on standing).
