This is just a quick post to show how lovely the Keto Breakfast Muffins are that I posted earlier today. A good spread of unsalted, grass-fed butter and topped with best-quality prosciutto and you have a quick lunch sorted for two people! My Keto Breakfast Muffins recipe (which is used in this recipe idea) makes two muffins, which are then essentially halved. Macros are calculated per one serving being two halves, exactly as pictured.

A great lunch treat using my Keto Breakfast Muffins, coming in at only 2.9g carbs per serving. Macros are calculated per one serving (1 muffin = 2 halves, as pictured) and the recipe serves two people.

  • 2 tsp olive oil
  • 1 TB unsalted grass-fed butter
  • 60 g best-quality prosciutto
  • salt and freshly ground black pepper
  • chopped parsley to garnish

Instructions
  1. If you haven’t done so already, halve the two Keto Breakfast Muffins you have made. Heat the olive oil in a pan and cook all four slices until toasty on both sides with a lovely crust.
  2. Once cooled, spread with the butter and top each with a slice of prosciutto (1 slice is approx. 15g).
  3. Season with salt and freshly ground black pepper, and garnish with chopped parsley.
