I love the Coconut-roasted Broccoli that Funnyman whips up, but doing the same thing with cauliflower is incredible! At only two-ingredients, this will likely be a favourite in your home as much as it is in ours. Quick, uncomplicated … and simply heavenly. This recipe will serve 3 people as a side veg option on a keto diet, but Funnyman and I scoff the whole lot between the two of us alongside our Peppered Lamb Ribs quite often. He has both dishes waxed, so these are the nights I put my feet up and do nothing but watch him cook for me for a change…
I love this dish! I baked baby onions in a thyme-infused cream and topped with a crumb made from blitzed lean pork scratchings and finely grated Parmesan. When I made this dish for us, we ended up eating them on top of our grilled pork chops: Lush! The peeling of the onions is mind-numbingly annoying and a finicky job, but the results are worth it in the end. Be sure to keep the little root end intact to ensure the onions keep their shape, but use a small, sharp paring knife to trim it close enough that the entire onion is edible. This recipe is a fantastic example of how versatile my Keto Creamy Cauliflower Mash is! This is a simple, hearty and comforting fish pie (coming in at 6.2g carbs per serving) and an ideal meal for the chilly evenings here in the UK. I have seen many stores sell ready “fish pie” mixes (usually a mix of chopped white fish, chopped salmon and chopped smoked haddock) which is handy, but I added prawns to my version to make it a wee bit fancier. This dish is just too lovely and I can’t wait for you to try it! Great with greens on the side, if desired.
Some may turn their nose up at mashing up cauliflower to mimic The Great Potato, but if you try it like this – you will be converted. I didn’t just stop at using a potato masher, I added full-fat cream cheese and then blitzed the mixture into a creamy, (dreamy) puree. All it needed was a little seasoning and it’s perfect as a side dish to mop up all those lovely flavours of your dish. You could also use it like I did to top my Low-carb Seafood Bake and Spicy Low-carb Cottage Pie.
Another way to Funnyman’s heart: CHICKEN WINGS! These are basted in a great keto marinade, similar to the one I made for the Keto Ribs, with the addition of a sprinkling of chili flakes scattered over at the end. Delicious for lazy Saturday afternoons while he watches the rugby. Definitely made to be enjoyed with your hands: Get messy! NOTE: The use of tamari (gluten-free soy sauce) in this recipe makes it not strictly keto.
I want to start by saying I did not invent this ‘Cloud Bread’. I am sure there is a great story behind the concept, but I am ashamed to say I haven’t even researched what that story is as I was too excited to try it out and post my version of keto cloud bread. After a slightly failed first attempt (at trying other versions I saw online), I made it my mission to improve what I had seen drawing from my own experience in the kitchen. The recipe will make 6, but essentially this means 6 halves (in other words – 3 sandwiches / 3 burgers). I first tasted dark chocolate-and-macadamia nut cookies on honeymoon in Malaysia more than 10 years ago. This was LBK (life-before-keto) and Funnyman and I were literally eating our way through Kuala Lumpur and Penang (it’s a foodie heaven!) One afternoon, when strolling through one of the enormous department stores* in KL, we found a mainstream cookie kiosk called Famous Amos. Their dark chocolate and macadamia cookies were sublime – and here I am, still thinking of them 10 years later! My version of keto cookies are chewier than I remember theirs being, but just as fab.
This lovely small meal of grilled brie mushrooms can be served either as an appetiser for your next fancy dinner party, or enjoyed as a light meal along with some fresh salad leaves. The red onions are cooked down for a while on a very low heat, and their jammy sweetness balances the oozy Brie just perfectly. The general marrying of the two flavours are worth knowing, even for those that don’t like mushrooms. Some examples include Brie and onion jam keto sandwiches or toppings for grilled steak. And for those that LOVE the idea of a big, black mushroom – do this exact dish as it is written here and top your bun-less burger with it – you will never consider a bacon and Cheddar topping again!
Funnyman and I don’t make a big deal of our keto journey (unless asked). When hosting, I simply make exact versions of the desserts I serve my guests and serve as normal, making sure we get the keto-friendly versions (this is mainly due to artificial sweeteners which not everyone has a taste for). This past summer, when making little berry meringue baskets for my guests, I whipped up a sugar-free version for us. While my rustic meringue baskets weren’t snow-white like the store-bought versions my guests received, they were still pretty damn tasty and hit the sweet spot. If you prefer to make a mess of this (I mean, to literally make a Berry Mess), simply use the Mini Meringues recipe and mix it all together just before serving… (as opposed to making a pretentious, deconstructed version like I have done here by piping them into baskets…)
This sensational salmon & avocado salad boosts a combination of flavours and textures that make every mouthful perfect harmony! Small details like toasting the pumpkin seeds beforehand, quick-pickling the thinly-sliced red onions and using roasted sesame oil makes this salad sensational. I used equal amounts of watercress and pea shoots as I find watercress can be a slightly dominating flavour for this salad.
If you are ambitious enough to own an ice-cream maker (I invested in this one), this Keto Coconut Ice cream should definitely be your first attempt. I struggle to find coconut cream at most stores (although ASDA sometimes has Blue Dragon brand – which is what I used). “Creamed coconut” or “coconut blocks” did not work for me, so I highly encourage you to source the Blue Dragon Coconut Cream. You will not prepare your ribs any other way after trying this method! These ones literally fall off the bone. I slow-cooked the rack in an air-tight parcel of foil at a relatively low oven temperature. Since all the store-bought marinade and bastes are packed with sugar, I developed my own. This is my low-carb marinade: it’s rich, tasty and packed with flavour. The recipe calls for 1 rack of low-carb pork ribs between two people – an ideal Saturday night treat for you and your loved one. I am one of those lucky ladies whose hubby brings me coffee in bed every morning, Also known as Caveman coffee or Bulletproof coffee, this is Funnyman’s version of our morning cuppa. One of these in the morning and I rarely eat breakfast because I am full and satisfied for many hours. It is commonly made in a blender, but we are busy people and can’t be bothered: invest in a mini whisk and you will save yourself plenty of money and time because the most important thing is that the fats are emulsified in the hot coffee. I like sweet coffee, and use Truvia sweetener. If you are starting off, use only a teaspoon MCT Oil then gradually increase the amount to one tablespoon because too much too soon can sometimes go right through you. Much like a bullet…
