If anyone in the Berkshire area is wondering why they can’t source lamb ribs at The Trose (over the season when they stock it), its because Funnyman and I empty the shelves on every visit and stock up our chest freezer. It is our favourite item on the braai and we enjoy it many nights (even in winter, when we bring our festivities indoors and cook them on our electric grill. Funnyman is the one who cooks them, while I sit back and sip my G-and-(sugar-free)-T) yelling instructions on the sidelines much to his annoyance. He likes them with this creamy mustard-mayo dip (included in the macros), but I love them just as they are…

  • 500 g lamb ribs
  • freshly ground black pepper
  • 20 g mayonnaise (optional)
  • 20 g Dijon mustard (optional)
  • Pink Himalayan Salt
  • chives snipped to garnish

Instructions
  1. Generously grind black pepper on all sides of each rib.
  2. Once your grill or braai (BBQ) is ready, grill the lamb ribs, turning regularly until the fat has crisped and the ribs have cooked, approximately 25-30 minutes.
  3. In the meantime, combine the mayonnaise and mustard in a small bowl.
  4. Season the cooked ribs with Pink Himalayan Salt and serve with the mustard mayo.

Recipe Notes

On the exceptionally chilly nights here in the UK, we use our indoor electric BBQ. It doesn't impart the same flavour you would get from cooking outdoors over wood, but it does the job and ours gets used plenty over winter!
