Ingredients
  • 1large egg yolk
  • 1tsp Dijon mustard
  • 2tsp white wine vinegar
  • generous pinch salt
  • 150g light olive oil
Instructions
  1. Wet a sheet of kitchen paper and place onto your kitchen work surface. Place a jug or bowl onto it. (I do this to ensure it doesn’t slip or move when I whisk. I found using a medium Pirex jug works best here.)
  2. Add the egg yolk, mustard, white wine vinegar and salt into the jug. Whisk well to combine.
  3. After you have weighed out your light olive oil, drizzle a very small amount into the jug and whisk well to emulsify. Continue to do so, drizzling small amounts and whisking well to emulsify the mixture, spending at least 10 seconds of vigorous whisking between each addition.
  4. Be patient here, DO NOT be tempted to add too much oil in one go, as the mixture may split. It should always look smooth after each whisking session.
  5. About halfway through, you will notice the mixture gets a little lighter and starts to slightly thicken.
  6. Continue the process until you have added all the oil. It should look like this:
  7. That’s it! You have just whipped up amazing, homemade mayonnaise. (And now you can skip “arm-day” at the gym!)
  8. **** PIMP YOUR MAYO: Roasted Garlic Mayonnaise ****
  9. Preheat the oven to 140°C / 285°F. Place 3-4 large unpeeled whole garlic cloves onto a small sheet of foil. (make sure the skin of each clove is intact.) Drizzle over a teaspoon olive oil and wrap the garlic cloves tightly in the foil, ensuring there are no holes where any air can escape. Place the little parcel in the oven for 30-35 minutes. Open up the parcel. Once the cloves are cool enough to handle, slice off the top end of each and slide out the roasted puree. Add it to the Mayonnaise you just made (recipe above). Lush with just about anything!
  10. **** PIMP YOUR MAYO: Lemon Mayonnaise ****
  11. Using the Mayonnaise recipe above, simply add the finely grated zest (use a microplane) of 1 large lemon to the finished batch. Stir well to combine. It is so delicious, I think it even knocks the other two out of the park!
