Ingredients
Instructions
  1. Weigh out the cocoa butter drops, then melt them over a very low heat on the stove top.
  2. Pour the melted cocoa butter into a small dish and leave to cool completely. (Failing to cool sufficiently may result in a grainy mousse)
  3. Whip the cream and sweetener to soft peaks. Add the rose water and food colouring (if using) and whip well to combine.
  4. Transfer a third of the whipped cream to the separate, smaller bowl. Pour the cooled cocoa butter into the smaller bowl of cream and beat well to combine.
  5. Return the cocoa butter/cream mix to the larger bowl of whipped cream, whipping one last time to combine. It should be fairly stiff peaks, but not as stiff as butter! Divide or pipe the mousse between 4 dessert bowls.
  6. If you have a few raspberries kicking about, garnish the mousse pots with them (not included in the macros).
