There is debate over whether its sarnies or sarmies. I don’t know about you, but I grew up in South Africa – and we called it sarmies-with-an-m. Any which way you say it, this is just a quick idea to showcase the M&L Keto Seed Loaf where I made mini chicken mayo sandwiches for a quick meal. I simply tossed cooked chicken pieces in my Homemade Mayonnaise and enjoyed it with deliciously sweet tomato slices and avocado. Clean eating all the way! (Top tip: if any seeds fall off the crust of the loaf, scatter them over your sandwich for extra crunch and texture.) The macros include the whole lot (two slices, as pictured): not too bad for a lovely lunch using all of your efforts.

I did an Instagram snapshot of me tucking into my recipe trial of these Ham & Gruyere Rolls (using Fathead Dough) last week. It was so well-received, I simply had to post the perfected recipe earlier than scheduled. Oh, how we love the Fathead Dough base! Here I used it (somewhat altered) to create deli ham and (powerfully-flavoured) Gruyere cheese rolls… and the results are simply amazing. I have to admit, even in LBK (Life Before Keto) I rarely ate bread. And when I did indulge, I always regretted it afterwards: I felt bloated and miserable and wouldn’t poop for a week (no bacon butty is worth that), so I didn’t miss it much when starting keto. However, being human and all, the craving for a slice of toast with butter-and-Bovril still slaps me through the face every now and again and I am well-chuffed with this alternative, where I used almond flour and ground chia seeds to achieve a lovely ‘bread’ texture and flavour. I have blogged about konjac (shirataki) noodles before – they are the bomb! Made out of the konjac root, the company Eat Water in the UK has (over time) perfected a noodle-looking food that is so low in carbs, I can fool myself into thinking I am enjoying a good pasta. They are high in fibre, very filling and even look like the real thing. Available in ‘rice’, ‘noodles’, ‘penne’ and ‘fettuccine’ (< my favourite), they are indeed a godsend for those on keto / low-carb diets. I love big, bold flavours that slap me right through the face, and you simply cannot go wrong with an excellent homemade Basil Pesto. My pesto recipe is unbeatable and I highly encourage you to whip up a batch at home – you will never eat store-bought again. By all means, add a lovely portion of grilled chicken to it, just include it in your macros.

This has to be one of my favourite salads to throw together. Apart from the deliciously fatty salmon and avocado generously covered in fresh lemon juice, it boasts capers, toasted pine nuts and shaved Parmesan: that’s just about all my favourite ingredients in one fairly posh salad. Smoked salmon brings back such fond memories for me, I worked on a cruise ship in Alaska in my early twenties and we had smoked salmon on-tap. It was excellent quality and it was bliss! Now, just to be clear, working on cruise ships may sound glamorous, but its not. At least, it wasn’t for me. I was hired as a photographer, but the small print indicated that I also had to dress up in giant animal outfits and have my picture taken with guests like a port mascot on most days.
