Cream-baked Broccoli (Keto)

Keto Cream-baked Broccoli
Keto Cream-baked Broccoli

Its difficult to communicate to readers how yummy something is. Sometimes I just shut down from lack of descriptive words (and I hope that my telling you this will inspire you to try it). Here, I simply baked par-cooked broccoli in seasoned double cream and the result was… well, incredible. I have no other words… this cream-baked broccoli will hopefully blow your hair back as much as it did mine. Be sure to also check out all the Side Dishes on M&L..

Keto Courgette Cheese Fritters with Spicy Tomato Relish

Keto Courgette Cheese Fritters

These courgette cheese fritters are enhanced by the addition of a spicy tomato relish, which really is the star of the show as it cuts through the richness and adds a spicy, sweet and acidic freshness. These fritters may be a little too rich and too high in protein to be served as a side dish, but they will make a great breakfast or light lunch option at 2.6g carbs per serving. Squeezing all the moisture from the grated courgettes is essential, and I used a piece of inexpensive muslin / cheesecloth to do this and I highly advise you do too. Be sure to check out the other Breakfast ideas on the site.

Cashew Nut ‘Cheese’ Sauce (Vegan)

Cashew Nut Cheese Sauce
Cashew Nut Cheese Sauce

Ok I admit, I am jumping on the Veganuary band-wagon here BUT only for a day (because….. well, bacon…?!)Here is a delicious ‘cheese’ sauce which is so versatile. I call it a ‘cheese’ sauce because the Nutritional Yeast Flakes in it add a deep umami ‘cheesy’ flavour which is absolutely delicious – especially when served over cooked Broccoli. I have created this for my dairy-free readers here on M&L … Happy 2019!

Keto Creamed Leeks

Keto Creamed Leeks

I get so many messages from friends and readers wanting to know what knives I use. When I finished culinary school many years ago, Funnyman bought me a Robert Welch Cook’s Knife and… I LOVE IT! I use a hundred times a day, I sharpen it with pride and it still lives in its protective box. No one is allowed to touch it, not even Funnyman (unless he wants me to use it on him). If you are looking to get a great knife set for your loved one, RW have a set now available – a perfect gift for the foodie in your life. To cut a long story short, I thought it would be a great time to showcase what knives I use, especially on this dreamy side dish which will sit perfectly on the side of your rib eye…

Cauliflower Rice (Keto; Paleo)

Keto Cauliflower Rice

This is a nifty way to mimic rice when you are serving a dish that needs all its lovely sauces mopped up. I cooked down onions and garlic to add more flavour before adding and cooking the blitzed cauliflower. It’s high in fibre and filling. You can play around and pimp it using different freshly chopped herbs or flavoured oils, but this recipe below is a good ‘base’, so go wild. Be sure to also check out my Creamy Keto Cauliflower Mash.

Coconut-roasted Cauliflower (Keto; Paleo)

Keto Coconut Cauliflower

I love the Coconut-roasted Broccoli that Funnyman whips up, but doing the same thing with cauliflower is incredible! At only two-ingredients, this will likely be a favourite in your home as much as it is in ours. Quick, uncomplicated … and simply heavenly. This recipe will serve 3 people as a side veg option on a keto diet, but Funnyman and I scoff the whole lot between the two of us alongside our Peppered Lamb Ribs quite often. He has both dishes waxed, so these are the nights I put my feet up and do nothing but watch him cook for me for a change…

Keto Baked Creamy Baby Onions with Crackling Crumb

Baked Onions
Baked Onions

I love this dish! I baked baby onions in a thyme-infused cream and topped with a crumb made from blitzed lean pork scratchings and finely grated Parmesan. When I made this dish for us, we ended up eating them on top of our grilled pork chops: Lush! The peeling of the onions is mind-numbingly annoying and a finicky job, but the results are worth it in the end. Be sure to keep the little root end intact to ensure the onions keep their shape, but use a small, sharp paring knife to trim it close enough that the entire onion is edible. (And don’t jab yourself like I did doing that …. #BloodFest2018)

Creamy Cauliflower Mash (Keto)

Keto Creamy Cauliflower Mash

Some may turn their nose up at mashing up cauliflower to mimic The Great Potato, but if you try it like this – you will be converted. I didn’t just stop at using a potato masher, I added full-fat cream cheese and then blitzed the mixture into a creamy, (dreamy) puree. All it needed was a little seasoning and it’s perfect as a side dish to mop up all those lovely flavours of your dish. You could also use it like I did to top my Low-carb Seafood Bake and Spicy Low-carb Cottage Pie.

Roasted Brussels Sprouts (Keto)

I wasn’t always a fan of Brussels sprouts. I remember as a kid, I used to hide them under my napkin just so that I could be excused from the dinner table. What was I thinking? I LOVE them now! If you are not a fan of Brussels sprouts, you have probably been preparing them wrong. I sometimes finely slice them and fry them with grass-fed butter and bacon bits, or roast them until crispy (like I have done here) and serve covered with grated Parmesan. If you love Brussels sprouts as much as I do, please check out the Brown-buttered Brussels Sprouts recipe. Both are an excellent side dish to your protein to complete a healthy keto meal.

Stir-fried Greens with Bacon (Keto; Paleo)

Keto Cabbage Bacon Stir Fry

Everything tastes awesome with bacon with its lovely salty, smokiness… This side dish of stir-fried greens with bacon is sensational! A large portion of this could easily stand as a meal on its own, but it would be better for your macros if this recipe was made for two as a side dish and served alongside a nice portion of protein, such as pork chops. TIP: use only the sliced white parts of leeks as the green ends are bitter. Be sure to check out all the other SIDE DISHES ideas on the site.

Greens with Crackling Crumb (Keto)

Greens with Buttermilk Dressing

While I simply love meat, a lot of my attention is focussed on the accompanying side dishes. Think further than frozen broccoli (gag!), because there is a multitude of things you could do with salads or cooked fresh vegetables making them interesting and fun. Here is one that is packed with flavour and can be served warm – or as a cool salad at your next braai… Be sure to check out all the other SIDE DISH ideas on the site.
