This is my FABULOUS Keto Creamed Spinach recipe – perfect when served with a juicy ribeye nestled alongside it. It serves two people, so double up the ingredients to feed the family (although we all know that a mountain of fresh spinach will wilt down to nothing, but luckily it happens pretty quickly, so simply add the spinach to the pan in two or three batches at a time.) I gently caramelised shallots and garlic for added flavour beforehand and added the raw spinach to the pan – again, cooking slowly and over a low heat with no added moisture (please don’t boil your spinach!). It takes some patience and constant stirring, but the results are crazy-amazing…

Low-carb Thai Prawn Curry with Cherry Tomatoes

Fragrant, spicy, creamy… this prawn curry was made using Thai yellow curry paste and coconut milk. I struggle to find Thai yellow curry paste in the stores here in the UK, so I buy it online. It’s authentic, delicious and affordable. I quickly cooked the prawns before starting the curry (and then added them back in to warm through before serving) because if you simply add the raw prawns directly into the hot curry to cook, you may end up with a bit of an unsightly grey soup and delay the sauce reducing (I learnt this from experience). The sauce is reduced until thick and creamy and then simply poured over konjac pasta. The plump prawns, sweet cherry tomatoes, salty fish sauce, spicy chilies, acidic lime and the fragrant coriander create perfect harmony. I also added a teaspoon of sweetener to finish it off with a little much-needed sweetness. Simply put – you need to eat this!

Bless his socks. This is without fail what Funnyman makes me when I need a night off from cooking and he isn’t treating me with his Lamb Ribs (…that man loves his black pepper!) He has perfected it over the years and has implemented little tricks that I shared with him (like the importance of a meat thermometer probe), so I simply love it! There isn’t much to it, its roast thicken thighs covered in (it’s body weight of) freshly ground black pepper prior to cooking. A quick fry on the stove-top skin-side down to render and crisp the fat, then finished in the oven, skin-side up. The accompanying sauce is a mix of mayo and Sriracha and I have included it in the macros because that’s how we enjoy it. If you prefer a ‘stricter’ keto dip, simply stir in homemade chili paste into your homemade mayo.
